Syrah (100%) from our vineyards of more than 15 years, located at 900 meters of altitude with low yields of 40 - 50 hl/ha.
The grapes obtained from harvest in their optima [ ripeness moment are destemmed and put in pre-fermentation maceration at 10 ºC to acquire a higher aromatical complexity. Fermentation and maceration have a duration of )4 days in temperatures which are not higher than 25 ºC, to enhance the varietal characteristics of the Wine. After malolactic acid fermentation, the Wine is kept in French oak and American oak barrels for 12 months inside a climatized cave, to get a good ageing and roundness.
Clarification and filtering before bottling, with ageing during a minimum of 3 months in bottle to get roundness and to keep the bouquet and characteristics of this Wine. Ali this process is made in a climatized warehouse with temperatures between 15 - 18 ºC.
Very intense purple red color. Aromas of ripe fruit and compote of black fruits, with balsamic notes from its ageing in barrel. In mouth it is powerful and tasty, with sweet and ripe tannins. Retronasal aromas are long with wide complexity and persistence.
Optimal consumption and conservation temperature: 14 y 16 ºC / 57,2 - 60,8 ºF.
Perfect company for all kind of roasted meat, and game meat.
Ideal with pasta and all kind of cheeses.
